Ingredients

  • 3 cups Fresh corn kernels (about 4 ears of corn)
  • 1.5 cups Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.25 cup Red onion, finely chopped
  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Fresh cilantro, chopped
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Lemon zest
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 Jalapeño, finely diced (optional)

Directions

Step 1

Fill a large pot with water and bring it to a boil. Add the fresh corn cobs to the boiling water and cook for 3-5 minutes until tender. Remove the corn from the water and let it cool slightly.
