Ingredients

  • 2 cups Fresh corn kernels (from about 2 ears of corn, or canned/drained)
  • 0.5 cups All-purpose flour
  • 0.25 cups Cornmeal (optional, for extra texture)
  • 2 large Eggs
  • 2 stalks Green onions, finely chopped
  • 1 clove Garlic, minced
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Cayenne pepper (optional, for heat)
  • 0.25 cups Milk
  • 0.5 cups Vegetable oil (for frying)
  • 0 optional Sour cream or Greek yogurt (for serving)

Directions

Step 1

In a large mixing bowl, combine the corn kernels, all-purpose flour, cornmeal (if using), baking powder, salt, black pepper, and cayenne pepper (if desired). Mix well to coat the corn evenly.

Step 2

Add the chopped green onions and minced garlic, stirring to evenly distribute.

Step 3

In a separate small bowl, whisk the eggs and milk together until well combined.

Step 4

Pour the egg mixture into the corn mixture and stir until a thick batter forms. It should hold together when scooped. If the batter is too wet, add a bit more flour, a tablespoon at a time.

Step 5

Heat the vegetable oil in a large skillet over medium-high heat. The oil should be about 1/4 inch deep.

Step 6

Using a tablespoon or small scoop, drop spoonfuls of batter into the hot oil. Flatten them slightly with the back of the spoon to form round patties.

Step 7

Fry the latkes for 2–3 minutes per side, or until golden brown and crispy. Work in batches to avoid overcrowding the pan.

Step 8

Remove the cooked latkes and drain on a plate lined with paper towels. Sprinkle a pinch of salt over the latkes while they are still hot.

Step 9

Serve warm, topped with a dollop of sour cream or Greek yogurt, if desired. Enjoy!
