Ingredients

  • 200 grams Corn kernels (fresh or frozen, thawed)
  • 60 grams All-purpose flour
  • 1 large Egg
  • 60 ml Milk (low-fat)
  • 2 stalks Green onions (finely chopped)
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil (for frying)
  • 2 tablespoons Light sour cream (optional, for serving)
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the corn kernels, chopped green onions, and parsley (if using).

Step 2

In another bowl, whisk together the flour, baking powder, salt, and black pepper.

Step 3

Beat the egg and milk together in a small bowl, then pour into the dry ingredients. Mix until just combined.

Step 4

Add the wet mixture to the corn and green onions. Stir gently until everything is evenly incorporated. Be careful not to overmix.

Step 5

Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat.

Step 6

Scoop 2 tablespoons of the batter for each fritter into the pan. Flatten slightly with the back of the spoon to form round patties.

Step 7

Cook for about 2-3 minutes on each side, or until golden brown and cooked through. Repeat with the remaining batter, adding more olive oil to the pan as needed.

Step 8

Transfer the cooked fritters to a plate lined with paper towels to absorb any excess oil.

Step 9

Serve warm with a dollop of light sour cream on top and garnish with fresh parsley if desired.
