  • 0.75 teaspoon Salt
  • 3 tablespoons Oil (preferably vegetable oil)
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 0.5 teaspoon Fennel seeds
  • 0.25 cup Dried coconut slices (optional)
  • 0.25 cup Raisins (optional)

Directions

Step 1

Heat a large, heavy-bottomed pan or wok over medium heat. Add the oil and let it heat up for a minute.

Add the mustard seeds and let them splutter. Follow with cumin seeds and fennel seeds, stirring for a few seconds until aromatic.

Step 3

Add the curry leaves, green chilies, and dried red chilies, sautéing for 30 seconds until the curry leaves are crisp and fragrant.

Lower the heat slightly and add the peanuts and cashews. Stir-fry them for about 2-3 minutes, ensuring they are golden and crunchy. If using dried coconut slices, add them at this stage and sauté until golden.
