Ingredients

  • 4 pieces Corn cobs (stripped of kernels)
  • 5 cups Water
  • 2 cups Granulated sugar
  • 2 tablespoons Lemon juice
  • 0.25 teaspoons Salt

Directions

Step 1

Rinse the corn cobs to remove any remaining debris or kernels.

Step 2

In a large stockpot, combine the corn cobs and 5 cups of water. Bring to a boil over medium-high heat.

Step 3

Once boiling, reduce the heat to low and simmer the cobs for 30 minutes to extract their flavor. Stir occasionally.

Step 4

After 30 minutes, remove the cobs from the pot using tongs and discard them.

Step 5

Add the granulated sugar, lemon juice, and salt to the pot of corn-infused water. Stir well to dissolve the sugar.

Step 6

Increase the heat to medium and allow the liquid to gently boil, reducing it to a syrupy consistency. This process should take about 25-30 minutes. Stir occasionally and keep an eye on the consistency as it thickens.

Step 7

To check the consistency, dip a spoon into the mixture and let it cool slightly. If it coats the back of the spoon and forms a light drizzle, it’s ready.

Step 8

Once the syrup has thickened to your liking, remove it from the heat and let it cool for 10-15 minutes.

Step 9

Strain the syrup through a fine-mesh sieve or cheesecloth into a clean glass jar or bottle to remove any impurities.

Step 10

Allow the syrup to cool completely before sealing the container tightly. Store in the refrigerator for up to 2 weeks.

Step 11

Serve over pancakes, waffles, ice cream, or use it to sweeten drinks and desserts.
