Ingredients

  • 3 cups Fresh corn kernels (from about 3 ears of corn)
  • 1 cup Cashews (soaked for 2-4 hours and drained)
  • 2 cups Filtered water
  • 1 medium Yellow bell pepper
  • 2 cloves Garlic
  • 2 tablespoons Lemon juice
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Green onions, chopped (for garnish)
  • 2 tablespoons Fresh parsley or cilantro, chopped (for garnish)

Directions

Step 1

1. If not already done, soak the cashews in water for 2-4 hours. Drain and set aside.

2. Reserve 1/2 cup of the fresh corn kernels for garnish and set aside.

3. In a high-speed blender, combine the remaining 2 1/2 cups of corn kernels, soaked cashews, filtered water, diced yellow bell pepper, garlic cloves, lemon juice, sea salt, and ground black pepper.

4. Blend on high until smooth and creamy. If the mixture seems too thick, you can add more filtered water, 1 tablespoon at a time, to reach your desired consistency.
