Ingredients

  • 1 cup Fresh corn kernels (from about 2 ears)
  • 0.5 cup Sun-dried tomatoes (packed in oil, drained and chopped)
  • 0.5 cup Goat cheese
  • 0.75 cup Panko breadcrumbs
  • 1 large Egg
  • 2 tablespoons All-purpose flour
  • 2 stalks Green onions (thinly sliced)
  • 1 clove Garlic (minced)
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil (for frying)
  • 4 pieces Hamburger buns (optional, for serving)
  • 4 pieces Lettuce leaves (optional, for serving)
  • 0.5 slices Sliced avocado (optional, for topping)

Directions

Step 1

In a large mixing bowl, combine the corn kernels, chopped sun-dried tomatoes, goat cheese, panko breadcrumbs, egg, and flour.

Step 2

Add the sliced green onions, minced garlic, ground cumin, salt, and black pepper to the mixture. Stir until well combined.

Step 3

Using clean hands, divide the mixture evenly and shape it into 4 burger patties, about 3/4 inch thick.

Step 4

Heat the olive oil in a large skillet over medium heat. Once hot, carefully place the burger patties into the skillet.

Step 5

Cook the patties for 4–5 minutes on each side, or until golden brown and heated through.

Step 6

Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.

Step 7

If serving on buns, lightly toast the buns in the same skillet or a toaster.

Step 8

Assemble the burgers by placing each patty on a bun (if using), layering with lettuce leaves, and adding avocado slices, if desired.

Step 9

Serve immediately and enjoy!
