Ingredients

  • 1 lb Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 14.5 oz Canned diced tomatoes (with juices)
  • 2 tbsp Tomato paste
  • 1 tsp Chili powder
  • 1 tsp Ground cumin
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 15 oz Canned whole kernel corn, drained
  • 1 cup Shredded cheddar cheese
  • 1 package Cornbread mix
  • 0.5 cup Milk
  • 1 large Egg

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up with a wooden spoon. Drain any excess fat.

Step 3

Add the diced onion to the skillet and sauté until softened, about 3 minutes. Stir in the minced garlic and cook for 1 more minute.

Step 4

Mix in the canned diced tomatoes (with juices), tomato paste, chili powder, cumin, salt, and black pepper. Let simmer for 5 minutes to combine flavors.

Step 5

Stir in the drained canned corn and remove the skillet from the heat.

Step 6

Transfer the beef mixture to the prepared baking dish and spread it out evenly. Sprinkle the shredded cheddar cheese evenly on top.

Step 7

In a medium bowl, prepare the cornbread mix according to the package instructions (mixing with milk and egg). Stir until smooth.

Step 8

Pour the cornbread batter evenly over the meat and cheese layer in the baking dish, spreading it with a spatula to cover completely.

Step 9

Bake in the preheated oven for 25 to 30 minutes, or until the cornbread topping is golden and cooked through (a toothpick inserted in the center should come out clean).

Step 10

Remove the casserole from the oven and let it cool for 5 minutes before serving. Enjoy!
