Ingredients

  • 2 cups Sweet corn kernels (fresh, frozen, or canned)
  • 1 cup Black beans (cooked or canned, drained and rinsed)
  • 2 Roma tomatoes (diced)
  • 1 Red bell pepper (diced)
  • 1 small Red onion (finely chopped)
  • 1 cup Fresh cilantro (chopped)
  • 1 Jalapeño pepper (seeded and finely chopped)
  • 3 tablespoons Lime juice (freshly squeezed)
  • 1 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

If using fresh corn, cook the kernels in boiling water for 3-4 minutes, then drain and let them cool completely. If using frozen corn, thaw it, and if using canned corn, drain and rinse thoroughly.

Step 2

In a large mixing bowl, combine the sweet corn kernels, black beans, diced tomatoes, diced red bell pepper, and finely chopped red onion.

Step 3

Add the chopped fresh cilantro and finely chopped jalapeño pepper to the bowl.

Step 4

In a small separate bowl, whisk together the lime juice, olive oil, ground cumin, salt, and black pepper to create the dressing.

Step 5

Pour the dressing over the salsa mixture and gently toss everything together to ensure the ingredients are well coated.

Step 6

Taste and adjust seasoning by adding more lime juice, salt, or pepper if needed.

Step 7

Cover the bowl and refrigerate the salsa for at least 15-20 minutes to allow the flavors to meld together.

Step 8

Serve the Corn Black Bean Salsa chilled with tortilla chips, or use it as a topping for tacos, salads, or grilled meats.
