Ingredients

  • 2 cups sweet corn kernels (fresh, frozen, or canned)
  • 1 15-ounce can black beans, rinsed and drained
  • 1 medium red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 0.25 cup fresh cilantro, chopped
  • 1 small jalapeño pepper, seeded and minced (optional)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey or maple syrup
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

If using fresh corn, cook the kernels in boiling water for 3-5 minutes until tender, then drain and let cool. If using frozen corn, thaw and drain. If using canned corn, simply drain and rinse.

In a large mixing bowl, combine the corn kernels, black beans, diced red bell pepper, cherry tomatoes, red onion, cilantro, and jalapeño (if using).
