Ingredients

  • 2 cups Black beans (cooked or canned, drained and rinsed)
  • 2 cups Corn kernels (fresh, canned, or frozen)
  • 1 medium Red bell pepper (diced)
  • 4 stalks Green onion (sliced)
  • 2 cups Cheddar cheese (shredded)
  • 1 cup Sour cream
  • 1 can Rotel tomatoes with green chilies (canned, drained)
  • 1 packet Taco seasoning
  • 2 cups Tortilla chips (crushed)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with non-stick spray or olive oil.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced red bell pepper and sauté for 3-4 minutes until slightly softened.

Step 3

In a large mixing bowl, combine the sautéed red bell pepper, black beans, corn, Rotel tomatoes, green onion, sour cream, taco seasoning, salt, and black pepper. Mix until well distributed.

Step 4

Spread half of the bean and corn mixture evenly across the bottom of the prepared baking dish.

Step 5

Sprinkle 1 cup of shredded cheddar cheese over the mixture, followed by 1 cup of crushed tortilla chips.

Step 6

Layer the remaining bean and corn mixture on top, then evenly sprinkle the remaining shredded cheddar cheese and crushed tortilla chips over the top.

Step 7

Cover the baking dish loosely with aluminum foil and bake in the preheated oven for 20 minutes.

Remove the foil and bake for an additional 10 minutes, or until the casserole is bubbly and the cheese is fully melted.

Remove the casserole from the oven and allow it to cool for 5 minutes before serving.
