Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cups Cornmeal
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.25 teaspoons Salt
  • 1 cup Buttermilk
  • 4 tablespoons Unsalted butter
  • 1 large Egg
  • 0.5 cup Cooked bacon, crumbled
  • 0.75 cups Sweet corn kernels (fresh, canned, or frozen)
  • 0.5 cup Shredded cheddar cheese
  • 2 tablespoons Chopped green onions (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease or line a 12-cup muffin tin with paper liners.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, sugar, baking powder, and salt.

Step 3

In a small saucepan, melt the butter over low heat and let it cool slightly.

Step 4

In a medium bowl, whisk together the buttermilk, melted butter, and egg until well combined.

Step 5

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix; the batter should be slightly lumpy.

Step 6

Fold in the crumbled bacon, corn kernels, shredded cheddar cheese, and green onions (if using) with a spatula until evenly distributed.

Step 7

Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Enjoy as a savory snack, or pair with soup or salad for a delicious meal.
