  • 1 pound large shrimp, peeled and deveined

  • 1 medium onion, finely diced
  • 3 garlic cloves, minced
  • 2 celery stalks, diced
  • 3 medium potatoes, peeled and diced
  • 3 cups corn kernels, fresh or frozen
  • 3 tablespoons all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1.5 cups heavy cream
  • 2 fresh thyme sprigs
  • 0.5 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large pot, heat the unsalted butter and olive oil over medium heat.

Step 2

Season the shrimp with 0.5 teaspoons of salt and 0.25 teaspoons of black pepper. Add the shrimp to the pot and cook for 2-3 minutes on each side or until they are pink and fully cooked. Remove the shrimp with a slotted spoon and set aside.

Step 3

In the same pot, add the diced onion, minced garlic, and diced celery. Sauté for 4-5 minutes or until the onion is translucent and fragrant.
