  • 100 g Polenta (fine or medium grind)
  • 250 ml Milk
  • 250 ml Water
  • 150 g Sweet corn kernels (fresh, frozen, or canned)
  • 50 g All-purpose flour
  • 50 g Grated Parmesan cheese
  • 2 large Eggs
  • 1 tsp Baking powder
  • 2 tbsp Fresh chives (chopped)
  • 1 tsp Salt
  • 0.5 tsp Black pepper (freshly ground)
  • 3 tbsp Olive oil (or vegetable oil for frying)

Directions

Step 1

In a medium saucepan, bring the milk and water to a gentle simmer over medium heat.

Gradually whisk in the polenta, stirring continuously to prevent clumping. Reduce the heat to low and cook for 4-5 minutes, or until the polenta thickens. Remove from the heat and let cool slightly.
