  • 0.5 cup molasses
  • 1 cup buttermilk
  • 1 whole large egg
  • 2 tablespoons granulated sugar

Directions

Step 1

Preheat your oven to 400°F (200°C) and grease or line a 12-cup muffin tin with paper liners.

Step 2

In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt until well combined.

Step 3

In a separate bowl, whisk together the melted butter, molasses, buttermilk, egg, and granulated sugar until smooth and well blended.

Step 4

Pour the wet ingredients into the dry ingredients and gently fold them together with a spatula or wooden spoon until just combined. Be careful not to overmix; some lumps are okay.
