Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 12 ounces kielbasa sausage, sliced into half-moons
  • 1 large yellow onion, diced
  • 1 medium carrot, peeled and diced
  • 1 medium celery stalk, diced
  • 3 cloves garlic cloves, minced
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 large Russet potatoes, peeled and diced into 1/2-inch cubes
  • 2 cups frozen corn kernels
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks green onions, thinly sliced (for garnish)
  • 0.5 cup shredded cheddar cheese (optional, for garnish)

Directions

Step 1

Heat a large pot over medium heat and add the butter and olive oil. Once melted, add the kielbasa and cook until browned on both sides, about 5 minutes. Remove the kielbasa with a slotted spoon and set aside.

Step 2

To the same pot, add the diced onion, carrot, and celery. Sauté until softened, about 5-6 minutes. Stir in the minced garlic and cook for an additional minute.

Step 3

Sprinkle the flour over the vegetables and stir well to coat. Cook for 2 minutes to remove the raw flour taste.

Step 4

Slowly pour in the chicken broth, stirring constantly to avoid lumps. Bring the mixture to a simmer.

Step 5

Add the diced potatoes to the pot and cook for 10-12 minutes, or until they are fork-tender.

Step 6

Stir in the corn kernels, heavy cream, thyme, smoked paprika, salt, and black pepper. Allow the chowder to simmer gently for 5 minutes.

Step 7

Return the browned kielbasa to the pot and stir to combine. Cook for another 2-3 minutes to warm through.

Step 8

Taste and adjust seasoning, adding more salt or pepper if needed.

Step 9

Ladle the chowder into bowls and garnish with sliced green onions and shredded cheddar cheese, if desired.

Step 10

Serve hot and enjoy your hearty Corn and Kielbasa Chowder!
