Ingredients

  • 1 cup All-purpose flour
  • 0.5 cup Cornmeal
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Cayenne pepper
  • 2 large Eggs
  • 0.5 cup Milk
  • 1 cup Fresh corn kernels
  • 8 ounces Lump crabmeat
  • 2 Scallions, finely chopped
  • 2 tablespoons Fresh parsley, chopped
  • 1 cup Vegetable oil (for frying)
  • 0.5 cup Mayonnaise
  • 2 cloves Garlic, minced
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Salt (for aioli)

Directions

Step 1

In a large mixing bowl, combine the flour, cornmeal, baking powder, salt, and cayenne pepper.

Step 2

In another bowl, whisk together the eggs and milk until well combined.

Step 3

Add the wet ingredients to the dry ingredients and stir until just combined.

Step 4

Fold in the corn kernels, crabmeat, scallions, and parsley, being careful not to overmix.

Step 5

Heat the vegetable oil in a large skillet over medium heat until it reaches 350°F (175°C).

Step 6

Scoop about 2 tablespoons of batter per fritter and gently drop it into the hot oil. Cook 2-3 fritters at a time to avoid overcrowding.

Step 7

Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy. Remove with a slotted spoon and drain on a plate lined with paper towels.

Step 8

In a small bowl, whisk together the mayonnaise, minced garlic, lemon juice, and salt to make the garlic aioli.

Step 9

Serve the fritters hot with the garlic aioli on the side for dipping.
