Ingredients

  • 150 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 1 large egg
  • 175 milliliters milk
  • 120 grams sweet corn kernels (fresh, canned, or frozen)
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon butter or neutral oil (for frying)

Directions

Step 1

In a medium mixing bowl, sift together the flour, baking powder, and salt.

Step 2

In a separate small bowl, whisk the egg and milk together until combined.

Step 3

Gradually add the wet ingredients to the dry ingredients, stirring gently with a whisk or spatula until just combined. Avoid overmixing; the batter should be smooth but slightly thick.

Step 4

Fold in the sweet corn kernels and finely chopped chives until evenly distributed through the batter.

Step 5

Heat a non-stick frying pan or skillet over medium heat and add a small amount of butter or oil to grease the surface.

Step 6

Once the pan is hot, spoon 2-3 tablespoons of batter per pikelet onto the pan, leaving some space between each one to allow for spreading. You can cook multiple pikelets at a time, depending on the size of the pan.

Step 7

Cook for 2-3 minutes or until bubbles begin to form on the surface and the edges appear set. Flip the pikelets gently with a spatula and cook for another 2-3 minutes on the other side until golden brown.

Step 8

Remove the cooked pikelets from the pan and place them on a plate lined with paper towels to absorb any excess oil.

Step 9

Repeat with the remaining batter, greasing the pan as needed between batches.

Step 10

Serve the Corn and Chive Bubble Pikelets warm, optionally garnished with extra chopped chives or a dollop of sour cream. Enjoy!
