Ingredients

  • 500 g broccoli florets
  • 250 g sweet corn (frozen or fresh)
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 500 ml milk
  • 200 g cheddar cheese (shredded)
  • 50 g breadcrumbs
  • 25 g parmesan cheese (grated)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil

Directions

Step 1

Preheat your oven to 190°C (375°F). Lightly grease a 9x13-inch baking dish with olive oil or non-stick spray.

Step 2

Bring a large pot of water to a boil. Blanch the broccoli florets for 2-3 minutes, then drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for 1-2 minutes to form a roux.

Gradually pour in the milk while whisking constantly to prevent lumps. Cook the mixture for 3-4 minutes until it thickens.
