Ingredients

  • 1 can (15 ounces) canned black beans
  • 1.5 cups fresh corn kernels (or canned/drained corn)
  • 1 whole (diced) medium red bell pepper
  • 0.5 whole (diced) medium red onion
  • 1 cup (halved or quartered) cherry tomatoes
  • 0.5 cup (chopped) fresh cilantro
  • 1 whole (minced, seeds removed for less heat) jalapeño pepper
  • 2 whole (juiced) lime
  • 1 tablespoon olive oil
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon (adjust to taste) salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse and drain the canned black beans thoroughly. Set aside to dry slightly.

Step 2

If using fresh corn, remove the kernels from the cob. For canned corn, drain and rinse well.

Step 3

In a large mixing bowl, combine the black beans, corn, diced red bell pepper, diced red onion, cherry tomatoes, chopped cilantro, and minced jalapeño.

Step 4

In a small bowl, whisk together the juice from 2 limes, olive oil, ground cumin, salt, and black pepper.

Step 5

Pour the lime dressing over the vegetable and bean mixture. Mix gently but thoroughly to ensure the flavors distribute evenly.

Step 6

Taste the salsa and adjust seasoning with more salt, pepper, or lime juice if needed.

Step 7

Cover the bowl and let the salsa chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Step 8

Serve the salsa chilled with tortilla chips, or use it as a topping for tacos, grilled chicken, or salads.
