Ingredients

  • 6 pieces Chicken thighs (bone-in, skinless)
  • 1 cup Fresh coriander leaves (cilantro), chopped
  • 2 teaspoons Ground coriander
  • 4 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 cup Greek yogurt
  • 2 tablespoons Lime juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Turmeric powder
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Onion, finely chopped
  • 0.5 cup Chicken broth
  • 2 small Green chilies, chopped (optional)

Directions

Step 1

In a large bowl, combine the Greek yogurt, garlic, ginger, lime juice, ground coriander, ground cumin, paprika, turmeric powder, salt, and black pepper. Mix well to create a marinade.

Step 2

Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 2 hours, or overnight for best results.

Step 3

Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until softened and lightly golden, about 3-4 minutes.

Step 4

Transfer the sautéed onion to the crock pot. Place the marinated chicken thighs on top of the onions.

Step 5

Sprinkle the chopped fresh coriander leaves over the chicken. Add the green chilies (if using) for extra heat.

Step 6

Pour the chicken broth into the crock pot to ensure the dish remains moist during cooking.

Step 7

Set the crock pot to low heat and cook for 6 hours, or until the chicken is tender and fully cooked through.

Step 8

Once done, serve the coriander chicken over steamed rice or with flatbread. Garnish with fresh coriander leaves if desired.
