Ingredients

  • 500 grams chicken breast
  • 1 bunch fresh coriander (cilantro)
  • 1 cup couscous
  • 3 tablespoons olive oil
  • 3 cloves garlic
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1.5 cups chicken stock
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 medium onion
  • 0.5 teaspoons red chili flakes (optional)

Directions

Step 1

Cut the chicken breast into bite-sized cubes and set aside.

Step 2

Finely chop the fresh coriander (reserve a small portion for garnish). Mince the garlic and finely chop the onion.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken cubes and season with salt and black pepper. Sear the chicken for 5-6 minutes until golden brown on all sides. Remove the chicken from the pan and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the chopped onion until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds, stirring constantly to prevent burning.

To serve, divide the couscous among four plates and spoon the coriander chicken mixture on top. Garnish with the reserved fresh coriander.
