Ingredients

  • 1 cup Honey
  • 1 cup Granulated sugar
  • 2 tablespoons Coriander seeds
  • 2 cups Water
  • 2 tablespoons Lemon juice
  • 1 tablespoon Powdered pectin

Directions

Step 1

In a small skillet, toast the coriander seeds over medium heat for 2–3 minutes until aromatic. Remove from heat and lightly crush the seeds using a mortar and pestle or the back of a spoon.

Step 2

In a medium saucepan, combine water, crushed coriander seeds, and honey. Bring to a gentle simmer over medium heat and cook for 5 minutes. Remove from heat and let the mixture steep for 15 minutes.

Step 3

Strain the liquid through a fine mesh sieve or cheesecloth into a clean saucepan, discarding the solids.

Step 4

Stir in the granulated sugar and lemon juice. Bring the mixture to a boil over medium-high heat, stirring frequently.

Step 5

Sprinkle the powdered pectin evenly over the boiling liquid while whisking continuously to ensure no lumps form. Continue to boil for 1–2 minutes or until the mixture thickens slightly.

Step 6

Remove from heat and let cool for 5–10 minutes, skimming off any foam on the surface with a spoon.

Carefully pour the jelly into sterilized jars, leaving about 1/4 inch of headspace. Seal the jars with lids and let them cool to room temperature.

Refrigerate the jars for at least 4 hours or until the jelly sets. Store in the refrigerator for up to 3 weeks or process the jars in a boiling water bath for long-term storage.
