  • 450 grams potatoes, peeled and cubed
  • 2 stalks celery stalks, diced
  • 1.5 liters beef stock
  • 250 milliliters Guinness stout (or similar dark beer)
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 1 tablespoon fresh thyme, chopped
  • 2 leaves bay leaves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef cubes with salt and black pepper, then sear them in batches until browned on all sides, about 4–5 minutes per batch. Remove the beef and set aside.

Step 3

Add the remaining tablespoon of olive oil to the pot. Sauté the diced onion for 3–4 minutes until softened, then add the minced garlic and cook for another minute until fragrant.
