Ingredients

  • 2 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups granulated sugar (for crust)
  • 32 ounces cream cheese, softened
  • 1 cups granulated sugar (for filling)
  • 0.75 cups sour cream
  • 2 teaspoons vanilla extract
  • 4 units large eggs
  • 2 cups fresh strawberries, hulled and halved
  • 0.5 cups granulated sugar (for sauce)
  • 1 tablespoons lemon juice
  • 2 tablespoons water

Directions

Step 1

Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan lightly with butter or non-stick spray.

Step 2

In a medium bowl, combine the graham cracker crumbs, melted butter, and 0.25 cups of granulated sugar. Mix until the crumbs are evenly coated with butter.

Step 3

Press the mixture firmly into the bottom of the prepared springform pan to create an even crust. Bake the crust in the preheated oven for 10 minutes. Remove from oven and set aside to cool.

Step 4

In a large mixing bowl, beat the softened cream cheese and 1 cup of granulated sugar on medium speed until smooth, about 2-3 minutes.

Step 5

Add the sour cream and vanilla extract to the mixture, and beat on low speed until well combined.

Step 6

Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Step 7

Pour the filling into the crust, spreading it out evenly with a spatula.

Step 8

Bake the cheesecake in the preheated oven for 55 minutes, or until the center is just set and slightly wobbly. Turn off the oven, crack the door slightly, and let the cheesecake cool in the oven for 1 hour.

Step 9

Once cooled, refrigerate the cheesecake for at least 4 hours or overnight to allow it to fully set.

Step 10

To make the strawberry sauce, combine the fresh strawberries, 0.5 cups of granulated sugar, lemon juice, and water in a medium saucepan over medium heat.

Step 11

Cook the mixture, stirring frequently, until the strawberries break down and the sauce thickens slightly, about 8-10 minutes. Remove from heat and let it cool to room temperature.

Step 12

Before serving, remove the cheesecake from the springform pan and transfer it to a serving platter. Slice the cheesecake and top with the strawberry sauce.
