Ingredients

  • 3 whole Avocados
  • 1 whole Lime
  • 1 teaspoon Salt
  • 0.5 cup Red onion
  • 1 whole Jalapeño
  • 0.25 cup Fresh cilantro
  • 4 whole Roma tomatoes
  • 2 cloves Garlic
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Ground cumin
  • 0.5 teaspoon Freshly ground black pepper

Directions

Step 1

Start with the salsa. Dice 2 Roma tomatoes into small cubes and transfer them to a medium mixing bowl.

Step 2

Mince 1 clove of garlic and add it to the bowl. Follow with 0.25 cup of diced red onion, finely diced jalapeño (remove seeds for less heat), and 0.25 cup of chopped fresh cilantro.

Step 3

Drizzle 1 tablespoon of olive oil and squeeze half of the lime over the salsa mixture. Add a pinch of salt, 0.25 teaspoon ground cumin, and 0.25 teaspoon of freshly ground black pepper. Toss until well combined. Set aside to let the flavors meld.

Step 4

Next, prepare the guacamole. Halve, pit, and scoop out the flesh of the 3 avocados into a separate bowl.

Step 5

Mash the avocado with a fork, leaving some chunks for texture. Add the remaining diced red onion (0.25 cup), the juice of the other half of the lime, and a pinch of salt.

Step 6

Dice the remaining 2 Roma tomatoes and stir them gently into the guacamole mixture along with 0.25 cup of chopped fresh cilantro and the second minced garlic clove.

Step 7

Taste the guacamole and salsa, adjusting salt and lime juice as needed for balance and brightness.

Step 8

Serve the guacamole and salsa together with tortilla chips, or as a topping for your favorite Mexican-inspired dishes. Enjoy!
