  • 2 tablespoons All-purpose flour
  • 2 tablespoons Olive oil
  • 4 strips Bacon, diced
  • 1 tablespoon Unsalted butter
  • 6 pieces Shallots, peeled and halved
  • 2 medium Carrots, sliced into rounds
  • 3 pieces Garlic cloves, minced
  • 3 cups Dry red wine
  • 1 cup Chicken stock
  • 2 tablespoons Tomato paste
  • 4 Thyme sprigs
  • 2 Bay leaves
  • 8 ounces Cremini mushrooms, sliced
  • 2 tablespoons Parsley, chopped for garnish

Directions

Step 1

Season the chicken pieces with salt and pepper. Lightly dredge the chicken in the flour, shaking off excess.

Step 2

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the chicken pieces and sear for 4-5 minutes per side until golden brown. Remove the chicken and set aside.

Step 3

Add the diced bacon to the pot and cook until crispy, approximately 5 minutes. Remove with a slotted spoon and set aside.

In the same pot, melt the unsalted butter. Add the shallots and carrots, cooking for 5-7 minutes until slightly softened. Stir in the garlic and cook for 1 minute until fragrant.

Add the cooked bacon and mushrooms to the pot after 45 minutes of cooking. Continue cooking for another 15 minutes uncovered to allow the sauce to thicken slightly.

Remove the thyme sprigs and bay leaves from the pot. Taste and adjust the seasoning with additional salt and pepper, if necessary.
