  • 2 tablespoons Shallots, thinly sliced
  • 1 cup Mushrooms, sliced
  • 1 small Carrot, peeled and diced
  • 1 stalk Celery, diced
  • 2 sprigs Fresh thyme
  • 1 sprig Fresh rosemary
  • 1 Bay leaf
  • 1 tablespoon Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 1 assortment Optional dipping items (meat, vegetables, seafood, or bread)

Directions

Step 1

In a medium saucepan or fondue pot, melt the butter over medium heat.

Step 2

Add the minced garlic and sliced shallots, and sauté for 1-2 minutes until fragrant.

Step 3

Add the sliced mushrooms, diced carrot, and diced celery to the pot. Cook for an additional 3-4 minutes, stirring occasionally, until the vegetables begin to soften.

Pour in the red wine and chicken broth, and stir to combine.

Step 5

Add the thyme sprigs, rosemary sprig, and bay leaf to the pot. Season with salt and freshly ground black pepper.

Step 6

Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 15-20 minutes to allow the flavors to meld together.

Remove the thyme, rosemary, and bay leaf from the pot before serving.

Step 8

Transfer the Coq Au Vin broth to a heated fondue pot or electric fondue cooker, and keep it warm over low heat.

Step 9
