  • 4 ounces Bacon or pancetta, chopped
  • 3 cloves Garlic cloves, minced
  • 1 large Yellow onion, diced
  • 3 medium Carrots, sliced thick
  • 2 cups Dry red wine (such as Pinot Noir or Merlot)
  • 1 cup Chicken stock
  • 1 tablespoon Tomato paste
  • 4 sprigs Fresh thyme sprigs
  • 1 leaf Bay leaf
  • 8 ounces Mushrooms, trimmed and sliced
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the chicken thighs dry with paper towels and season generously with salt and pepper.

Step 2

Dredge the chicken pieces in flour, shaking off excess.

Step 3

In a large Dutch oven or heavy pot, heat olive oil and 1 tablespoon of butter over medium-high heat.

Sear the chicken thighs skin-side down until golden brown, about 4-5 minutes per side. Work in batches if necessary. Set the browned chicken aside.

In the same pot, add chopped bacon and cook until crispy, about 5 minutes. Remove the bacon and set aside, leaving the rendered fat in the pot.

While the chicken simmers, heat the remaining 1 tablespoon of butter in a skillet over medium heat. Add sliced mushrooms and sauté until golden brown, about 6-7 minutes. Set aside.

After 45 minutes, add the sautéed mushrooms and crispy bacon to the pot. Uncover and simmer for an additional 20 minutes to let the sauce thicken.

Remove the thyme sprigs and bay leaf. Adjust seasoning with additional salt and pepper if needed.
