Ingredients

  • 8 Large eggs
  • 1 cup Cottage cheese
  • 1 cup Shredded Gruyere cheese
  • 4 slices Cooked bacon, crumbled
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Lightly spray a muffin tin or silicone mold with cooking spray and set aside.

Step 3

In a blender, combine the eggs, cottage cheese, shredded Gruyere, salt, and pepper. Blend on high speed until the mixture is completely smooth, about 30 seconds.

Step 4

Pour the egg mixture evenly into the prepared muffin tin or silicone molds, filling each cup about three-quarters full.

Step 5

Evenly distribute the crumbled bacon across each of the molds, gently pressing them into the egg mixture.

Step 6

Place the muffin tin or molds on a large, rimmed baking sheet and carefully fill the baking sheet with hot water until it reaches halfway up the sides of the muffin tin. This simulates the sous vide water bath method.

Step 7

Carefully transfer the baking sheet to the preheated oven and bake for 30 minutes, or until the egg bites are just set and slightly golden on top.

Remove the baking sheet from the oven and let the egg bites cool in the tray for a few minutes before carefully removing them.
