Cook the fettuccine pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
Heat 1 tablespoon of butter and the olive oil in a large skillet over medium-high heat.
Season the shrimp with 1/2 tablespoon of Cajun seasoning, then add them to the skillet. Cook for 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
In the same skillet, add diced tasso ham and cook for 2-3 minutes until lightly browned. Remove and set aside with the shrimp.
Reduce the heat to medium. Melt the remaining 2 tablespoons of butter in the skillet, then add the chopped onion and diced green bell pepper. Sauté for 5 minutes or until softened.
Add minced garlic and cook for 1 minute until fragrant.
Stir in the remaining Cajun seasoning, smoked paprika, and thyme. Cook for 30 seconds to bloom the spices.
Pour in the chicken or seafood stock and scrape up any browned bits from the skillet. Let it simmer for 2-3 minutes.
Lower the heat to medium-low and stir in the heavy cream. Allow the mixture to simmer gently for 3-4 minutes until it starts to thicken.
Stir in the grated Parmesan cheese until melted and incorporated into the sauce. If needed, adjust the sauce consistency with reserved pasta water.
Return the cooked shrimp and tasso ham to the skillet, along with the cooked fettuccine. Toss until everything is evenly coated in the sauce.
Season the dish with salt and black pepper to taste.
Garnish with chopped fresh parsley, and serve immediately.
