Ingredients

  • 16 oz Velveeta cheese
  • 2 cups Pepper Jack cheese
  • 1 cup Whole milk
  • 10 oz Diced tomatoes with green chilies (Rotel)
  • 1 Yellow onion, finely diced
  • 1 Fresh jalapeño, finely diced
  • 2 tbsp Unsalted butter
  • 2 tbsp Fresh cilantro, chopped
  • 1 tsp Ground cumin
  • 0.5 tsp Garlic powder
  • 0.5 tsp Chili powder
  • 0.25 tsp Salt
  • 1 tbsp Fresh lime juice

Directions

Step 1

Dice the Velveeta cheese and shred the Pepper Jack cheese. Set aside.

Step 2

In a medium saucepan, melt the butter over medium heat. Add the diced onion and fresh jalapeño. Sauté for 3-4 minutes until softened and fragrant.

Stir in the diced tomatoes with green chilies (including the liquid) and cook for another 2 minutes.
