Ingredients

  • 2 pieces Chicken breast, boneless and skinless

  • 6 cups Chicken broth
  • 1 can (10 oz) Diced tomatoes with green chilies (such as Rotel)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Corn kernels, frozen or canned
  • 1 cup Black beans, cooked or canned (drained and rinsed)
  • 0.25 cup Fresh cilantro, chopped
  • 2 tablespoons Lime juice, freshly squeezed
  • 2 cups Tortilla chips or strips
  • 1 cup Shredded cheddar cheese
  • 1 large Avocado, diced (optional)
  • 0.5 cup Sour cream (optional)

Directions

Step 1

Season the chicken breasts with a pinch of salt, pepper, and a dash of cumin.

Step 2

In a large pot, heat olive oil over medium heat. Add the chicken breasts and sear for 2-3 minutes on each side until golden brown. Remove the chicken and set aside.

In the same pot, add diced onion and sauté for 4-5 minutes until softened. Stir in the minced garlic and cook for 1 minute until fragrant.
