  • 1 teaspoon Baking soda
  • 0.25 teaspoons Salt
  • 1 cup Buttermilk
  • 2 tablespoons Vegetable oil
  • 1 large Egg
  • 2 tablespoons Butter (for greasing the griddle)

Directions

Step 1

In a medium mixing bowl, whisk together the all-purpose flour, powdered sugar, baking powder, baking soda, and salt until well combined.

Step 2

In a separate bowl, whisk together the buttermilk, vegetable oil, and the egg until smooth.

Step 3

Gradually pour the wet ingredients into the dry ingredients, stirring gently. Mix until just combined. Do not overmix—a few small lumps are okay.
