Ingredients

  • 4 pieces (about 4-5 oz each) Cube steak
  • 2.5 cups All-purpose flour
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Paprika
  • 2 whole Large eggs
  • 0.5 cups Buttermilk
  • 1 cups Vegetable oil
  • 3 tablespoons Unsalted butter
  • 2.5 cups Milk
  • 0.5 cups Chicken broth

Directions

Step 1

Pound the cube steaks with a meat mallet until they are about 1/4-inch thick. Set aside.

Step 2

In a shallow dish, combine 2 cups of all-purpose flour with 1 teaspoon of salt, 1 teaspoon of black pepper, garlic powder, onion powder, and paprika. Mix well.

Step 3

In another shallow dish, whisk together the eggs and buttermilk until fully combined.

Step 4

Dredge each piece of steak in the seasoned flour mixture, ensuring an even coating. Then dip the steak into the egg mixture, letting the excess drip off, and dredge again in the flour mixture. Set aside on a plate.

Step 5

Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot (around 350°F), add the breaded steaks in batches, being careful not to overcrowd the pan.

Step 6

Cook each steak for 3-4 minutes per side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

Step 7

Discard most of the oil from the skillet, leaving about 3 tablespoons of drippings. Add the unsalted butter to the skillet and melt over medium heat.

Step 8

Stir in the remaining 1/2 cup of flour and cook for 1-2 minutes, whisking constantly, to create a roux.

Step 9

Slowly whisk in the milk and chicken broth, stirring constantly to prevent lumps. Cook for 4-5 minutes, or until the gravy thickens to desired consistency.

Step 10

Season the gravy with the remaining 1/2 teaspoon of salt and additional pepper to taste.

Step 11

Serve the chicken fried steaks hot, smothered in the creamy country gravy. Pair with mashed potatoes or a fresh biscuit for a perfect meal.
