Ingredients

  • 1 cup Butter, unsalted
  • 1 cup Brown sugar, packed
  • 0.5 cup Granulated sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla extract
  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 3 cups Rolled oats
  • 1 cup Raisins (optional)
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes using a hand or stand mixer.

Step 3

Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract.

Step 4

In a separate medium-sized bowl, combine the all-purpose flour, baking soda, ground cinnamon, and salt. Whisk until evenly distributed.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

Step 6

Stir in the rolled oats by hand, followed by the raisins and chopped walnuts if using. The dough will be thick.

Step 7

Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 8

Bake in the preheated oven for 8-10 minutes, or until the cookies are lightly golden around the edges but still soft in the center.

Step 9

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 1 week or freeze for longer storage.
