  • 2 pieces Chicken breast
  • 2 tablespoons Olive oil
  • 2 teaspoons Taco seasoning
  • 4 pieces Large flour tortillas
  • 2 cups Shredded Mexican cheese blend
  • 1 piece Red bell pepper
  • 1 piece Green bell pepper
  • 1 piece White onion
  • 2 tablespoons Butter
  • 0.5 cup Sour cream
  • 0.5 cup Salsa or pico de gallo
  • 1 tablespoon Cilantro (optional for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a skillet over medium-high heat.

Step 2

Season the chicken breasts with taco seasoning on both sides.

Step 3

Cook the chicken in the skillet for 5-6 minutes per side or until the internal temperature reaches 165°F (74°C). Remove from the pan and let rest for 5 minutes before slicing into thin strips.

Step 4

In another skillet, heat the remaining 1 tablespoon of olive oil over medium heat.

Step 5

Slice the red bell pepper, green bell pepper, and white onion into thin strips. Cook them in the skillet for 5-7 minutes or until they are tender but still slightly crisp. Remove from heat.
