Ingredients

  • 3 medium, ripe Avocados
  • 0.33 cup, chopped Sun-dried tomatoes
  • 2 tablespoons, finely diced Red onion
  • 2 tablespoons, chopped Cilantro
  • 1 tablespoon Lime juice
  • 0.5 teaspoon Salt
  • 6 pieces Egg roll wrappers
  • 4 cups (for frying) Vegetable oil
  • 0.25 cup Cashews
  • 0.25 cup Fresh basil leaves
  • 1 clove Garlic
  • 3 tablespoons Sugar
  • 2 tablespoons White vinegar
  • 1 tablespoon Balsamic vinegar
  • 0.5 cup Water

Directions

Step 1

In a large mixing bowl, gently combine diced avocados, chopped sun-dried tomatoes, diced red onion, chopped cilantro, lime juice, and salt. Be careful not to mash the avocados.

Step 2

Lay out one egg roll wrapper with one corner pointing toward you. Place about 2 tablespoons of the avocado mixture in the center of the wrapper.

Step 3

Fold the corner closest to you over the filling, then fold in the two side corners, and roll tightly. Brush a small amount of water on the edges to seal the wrapper. Repeat with the remaining wrappers and filling.

Step 4

Heat vegetable oil in a deep fryer or a heavy-bottomed pot to 375°F (190°C).

Step 5

Fry the egg rolls, a few at a time, for 3-4 minutes or until golden brown. Remove and drain on a paper towel-lined plate.

Step 6

To make the dipping sauce, combine cashews, basil leaves, garlic, sugar, white vinegar, balsamic vinegar, and water in a blender or food processor. Blend until smooth.

Step 7

Serve the egg rolls hot with the prepared cashew-basil dipping sauce on the side.
