Ingredients

  • 12 ounces Fettuccine pasta
  • 2 tablespoons Olive oil
  • 2 pieces Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 ounces Cremini or white mushrooms
  • 3 cloves Garlic cloves, minced
  • 0.25 cup Dry white wine (optional)
  • 1.5 cups Heavy cream
  • 1 cup Grated Parmesan cheese
  • 2 tablespoons Butter
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Fill a large pot with water, add a pinch of salt, and bring it to a boil. Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside.

Step 2

While the pasta cooks, season the chicken breasts with salt and black pepper on both sides.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest for 5 minutes before slicing it into thin strips.

Step 4

In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and sauté for 4-5 minutes, until they release their moisture and are lightly browned.

Add the cooked fettuccine pasta to the skillet, tossing to coat it evenly in the creamy sauce.

Top the pasta with the sliced chicken. Sprinkle with fresh parsley if desired and serve immediately.
