Ingredients

  • 6 large Eggs
  • 2 tablespoons Heavy cream
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Chives
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 cups Grated cheddar cheese (optional)
  • 6 halved Cherry tomatoes (optional)

Directions

Step 1

Crack the eggs into a medium-sized bowl and whisk them until the yolks and whites are fully combined and slightly frothy.

Step 2

Add the heavy cream, salt, and black pepper to the eggs and whisk again until smooth.

Step 3

Finely chop the chives and set aside.

Step 4

Heat a nonstick skillet over low heat and add the unsalted butter. Allow the butter to melt gently but avoid letting it brown.

Step 5

Pour the egg mixture into the skillet and let it sit undisturbed for about 20 seconds.

Step 6

Using a heatproof spatula, gently stir the eggs with slow, sweeping motions, lifting and folding them from the edges toward the center. Keep the heat low to ensure slow, creamy cooking.

Step 7

Once the eggs are about halfway cooked, add the chives and optional grated cheddar cheese. Continue stirring gently until the eggs are soft and just set. Remove the skillet from the heat slightly before they're fully cooked, as the residual heat will finish them.

Step 8

Serve immediately with optional cherry tomatoes on the side for a fresh and colorful garnish.
