Ingredients

  • 1 head Cauliflower
  • 3 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 2 cups Whole milk
  • 2 cups Cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Breadcrumbs
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Trim the cauliflower into florets, discarding the thick stem. Steam the florets for 5-7 minutes until slightly tender but not mushy. Set aside.

Step 3

In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly to form a roux.

Step 4

Gradually add the milk while whisking to prevent lumps. Cook for 4-5 minutes, stirring constantly, until the mixture thickens into a creamy consistency.

Step 5

Remove the saucepan from heat and stir in the cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix until the cheese is melted and the sauce is smooth.

Step 6

Grease a 9x13-inch (23x33 cm) baking dish with a little butter or oil. Add the steamed cauliflower florets, spreading them evenly.

Step 7

Pour the cheese sauce over the cauliflower, ensuring it coats the florets evenly.

Step 8

In a small bowl, mix the breadcrumbs and olive oil until the crumbs are lightly coated. Sprinkle the breadcrumb mixture over the top of the casserole.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbling.

Step 10

Remove from the oven and let cool for 5 minutes. Garnish with fresh parsley, if desired, before serving.
