  • 2 pounds raccoon meat
  • 3 medium potatoes
  • 1 large yellow onion
  • 3 pieces garlic cloves
  • 2 cups beef or chicken stock
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Start by cleaning and trimming the raccoon meat, removing any remaining fat or sinew.

Step 2

Cut the meat into small bite-sized pieces.

Step 3

Peel and dice the potatoes into small cubes, approximately half an inch in size.

Step 4

Chop the onion finely and mince the garlic cloves.

Step 5

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the raccoon meat to the pot and sear on all sides until browned. Remove and set aside.
