Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 0.5 cups all-purpose flour
  • 2 pieces large eggs
  • 2 tablespoons water
  • 1 cups panko breadcrumbs
  • 0.5 cups grated Parmesan cheese
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 as needed olive oil spray
  • 1.5 cups marinara sauce
  • 1 cups shredded part-skim mozzarella cheese
  • 6 pieces fresh basil leaves

Directions

Step 1

Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper or foil and set aside.

Step 2

Place the chicken breasts between two pieces of plastic wrap or parchment paper. Using a meat mallet, pound them to an even thickness of about 1/2 inch.

Step 3

In a shallow bowl, place the flour. In another shallow bowl, whisk together the eggs and water. In a third shallow bowl, mix the breadcrumbs, Parmesan cheese, Italian seasoning, salt, and black pepper.

Step 4

Dredge each chicken breast in the flour, coating both sides, then dip it into the egg mixture, and finally press it into the breadcrumb mixture, ensuring an even coating. Place the prepared chicken on the baking sheet.

Step 5

Lightly spray the tops of the chicken breasts with olive oil spray to help them crisp up in the oven.

Step 6

Bake the chicken in the preheated oven for 20 minutes, flipping halfway through, until golden brown and the internal temperature reaches 165°F (74°C).

Step 7

Remove the baking sheet from the oven. Spoon 2-3 tablespoons of marinara sauce over each piece of chicken, then sprinkle evenly with mozzarella cheese.

Step 8

Return the chicken to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbling.

Step 9

Garnish with fresh basil leaves before serving. Serve alongside a fresh salad, pasta, or roasted vegetables for a complete meal.
