Ingredients

  • 1.25 cups All-purpose flour
  • 0.25 cups Granulated sugar
  • 0.25 teaspoons Salt
  • 0.5 cups Unsalted butter, chilled and cubed
  • 4 tablespoons Ice water
  • 3 medium Apples (Granny Smith or another tart variety), peeled, cored, and thinly sliced
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 2 Large eggs
  • 1 cups Buttermilk
  • 1 teaspoons Vanilla extract
  • 0.5 cups Brown sugar
  • 2 tablespoons All-purpose flour (for custard mixture)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium bowl, combine 1.25 cups of flour, 0.25 cups of sugar, and 0.25 teaspoons of salt. Add the chilled, cubed butter and use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 3

Gradually add ice water, 1 tablespoon at a time, mixing gently after each addition until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and chill in the refrigerator for at least 15 minutes.

Step 4

On a floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough into a 9-inch pie dish, trimming any excess around the edges. Crimp or decorate the edges as desired.

Step 5

Toss the sliced apples with ground cinnamon and nutmeg in a bowl. Arrange them evenly in the prepared pie crust.

Step 6

In a separate bowl, whisk together the eggs, buttermilk, vanilla extract, brown sugar, and 2 tablespoons of flour. Pour the custard mixture evenly over the apples.

Step 7

Place the pie on the middle rack of the preheated oven and bake for 40-45 minutes, or until the custard is set and the top is lightly golden.

Step 8

Allow the pie to cool slightly before serving warm. Optionally, garnish with a dollop of whipped cream or a sprinkle of powdered sugar.
