Ingredients

  • 1 tablespoon Olive oil
  • 1 pound Ground turkey (lean, 93% lean or more)
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1 medium Green bell pepper, chopped
  • 2 cups Chicken broth (low-sodium)
  • 14.5 ounces Diced tomatoes (no salt added, with juice)
  • 15 ounces White beans (cannellini or great northern beans), drained and rinsed
  • 4 ounces Green chilies (mild, chopped, canned)
  • 1 tablespoon Chili powder
  • 2 teaspoons Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)
  • 0.25 cup Low-fat sour cream (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the ground turkey to the pot and cook until browned, breaking it up with a wooden spoon as it cooks, about 5-7 minutes.

Step 3

Add the diced onion, minced garlic, and chopped green bell pepper to the pot. Sauté for 5 minutes or until the vegetables are softened.

Step 4

Stir in the chili powder, cumin, paprika, salt, and black pepper, and cook for 1 more minute until fragrant.

Step 5

Add the chicken broth, diced tomatoes (with their juice), white beans, and green chilies to the pot. Stir to combine.

Step 6

Bring the mixture to a simmer, then reduce the heat to low. Cover and let the chili cook for 15-20 minutes, stirring occasionally.

Step 7

Taste the chili and adjust seasoning if necessary.

Step 8

Ladle the turkey and white bean chili into bowls, and garnish with chopped cilantro and a dollop of low-fat sour cream, if desired. Serve hot and enjoy!
