  • 15 ounces Part-skim ricotta cheese

  • 1 unit Large egg
  • 12 sheets Dried lasagna noodles
  • 3 cups Marinara sauce (low sodium preferred)
  • 1 teaspoons Olive oil
  • 2 cloves Garlic, minced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant.

Add the fresh spinach to the skillet and cook until wilted, about 3–4 minutes. Remove from heat and let cool slightly. Once cooled, squeeze out any excess liquid and chop coarsely.

In a medium mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, beaten egg, salt, black pepper, and the cooked spinach. Mix well to create the filling.

Cook the lasagna noodles according to the package instructions. Drain and set aside.
