Ingredients

  • 4 cups Romaine lettuce
  • 2 cups Fresh spinach leaves
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.5 cup Red onion, thinly sliced
  • 1 cup Frozen peas, thawed
  • 0.5 cup Reduced-fat cheddar cheese, shredded
  • 4 slices Turkey bacon, cooked and crumbled
  • 0.5 cup Greek yogurt
  • 0.25 cup Light mayonnaise
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Prepare the turkey bacon by cooking it in a skillet over medium heat until crispy, about 5 minutes. Once cooked, transfer to a paper towel-lined plate to cool, then crumble into pieces.

Step 2

In a small bowl, prepare the dressing by whisking together Greek yogurt, light mayonnaise, lemon juice, garlic powder, salt, and black pepper. Set aside.

Step 3

In a clear glass bowl or trifle dish, layer the romaine lettuce evenly at the bottom.

Step 4

Next, layer the fresh spinach leaves on top of the romaine lettuce.

Step 5

Add a layer of halved cherry tomatoes, followed by the diced cucumber.

Step 6

Sprinkle the thinly sliced red onions evenly over the cucumber layer.

Step 7

Add the thawed peas as the next layer, spreading them out evenly.

Step 8

Sprinkle the shredded reduced-fat cheddar cheese evenly over the peas.

Step 9

Top the salad layers with the crumbled turkey bacon to complete the dish.

Step 10

Spread the prepared dressing evenly over the top layer. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.

Step 11

Just before serving, gently toss all the layers together or serve it as-is for a beautiful layered presentation.
