Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 3 pieces Large eggs
  • 1.5 teaspoons Vanilla extract
  • 1 cup Buttermilk
  • 1 cup Chopped pecans
  • 8 ounces Cream cheese, softened
  • 0.25 cup Unsalted butter, softened (for frosting)
  • 0.5 cup Maple syrup
  • 2 cups Powdered sugar
  • 0.25 cup Chopped pecans (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, then set aside.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

Step 3

In a large mixing bowl, beat the butter, granulated sugar, and brown sugar with an electric mixer at medium speed until light and fluffy.

Step 4

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.

Step 6

Gently fold in the chopped pecans, being careful not to overmix.

Step 7

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

Step 8

Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 9

To make the frosting, beat the cream cheese and butter together in a medium bowl until smooth and creamy.

Step 10

Gradually add the maple syrup and powdered sugar, beating at low speed until fully incorporated and the frosting is fluffy.

Step 11

Once the cakes are completely cool, spread a generous layer of frosting on top of one cake layer. Place the second layer on top and frost the top and sides of the cake.

Step 12

Sprinkle the cake with the additional chopped pecans for garnish.

Step 13

Slice and enjoy your beautifully assembled Eastern Harvest Pecan Cake with Maple Frosting!
