Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper or silicone baking mats.
In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until combined.
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix the dough.
If desired, scoop approximately 1-inch balls of dough and roll them in coarse sugar or sanding sugar for an extra decorative texture.
Place the dough balls about 2 inches apart on the prepared baking sheets.
Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are set and the centers look slightly underbaked. Do not overbake as they will firm up as they cool.
While the cookies are baking, unwrap the Hershey’s Hugs candies and set them aside.
Once the cookies come out of the oven, immediately press one Hershey’s Hug gently into the center of each cookie. The heat from the cookies will soften the Hug slightly, so avoid touching it.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. This will help the Hug set properly.
Serve and enjoy, or store the cookies in an airtight container at room temperature for up to 5 days.
