Ingredients

  • 4 large Egg whites
  • 200 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 50 grams All-purpose flour
  • 10 grams Cornstarch
  • 1 pinch Pinch of salt
  • 50 grams Mini chocolate chips (optional)
  • 10 grams Powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 250°F (120°C) and line two baking sheets with parchment paper.

Step 2

In a clean, dry mixing bowl, beat the egg whites with a pinch of salt using an electric mixer on medium speed until soft peaks form.

Step 3

Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat on high speed. Beat until stiff, glossy peaks form and the sugar has dissolved completely.

Step 4

Gently fold in the vanilla extract using a spatula. Avoid overmixing to preserve the airiness.

Step 5

Sift together the all-purpose flour and cornstarch, then gently fold it into the egg white mixture in two additions. If you're using mini chocolate chips, fold them in at this stage.

Step 6

Using a spoon or a piping bag, drop small mounds of the mixture onto the prepared baking sheets, spacing them about an inch apart.

Step 7

Bake in the preheated oven for 1.5 hours, or until the cookies are dry and crisp on the outside. Turn off the oven and let the cookies cool completely inside the oven to avoid cracking.

Step 8

Optionally, dust the cooled cookies with powdered sugar for a decorative touch. Store in an airtight container for up to 5 days.
